You can check edits individually, actually. Strider showed me the button for it. :D On the activity feed, when someone makes an edit, there will be a little picture of a paper with a magnifying glass over it, right next to the "edited by so and so 5 hours ago". Click that and it shows the previous edit compared with the new edit.
