I know they want to bring Kate back, but I don't see how creating a whole new dimension would achieve that any better than simply going to any other dimension where she still lives (and/or retrieving her from the Earth dimension first, if that's the one we're choosing). Because essentially they're not bringing Kate back, but rather creating a new one with her own history, her own home dimension, her own family and friends. It's not like they could just steal her from that dimension and expect her or the people she knows to be fine with that. And if it was just to be able to meet her in whatever dimensions, I don't see why the other Kate wouldn't do, even if she was the "wrong" age.
